Martini goose becomes a Christmas goose
What the Martini goose is to autumn, the Christmas goose is to winter. Served with red cabbage and potato dumplings, it's is an especially festive dish that needs a bit of preparation. But it's well worth the effort, because home-cooked food always tastes the best.
Red cabbage:
- 130 g sugar
- 5 cloves
- 1 cinnamon stick
- 1 bay leaf
- 5 juniper berries
- 250 ml apple juice
- 250 ml red wine
- 250 ml orange juice
- 1 level tsp
- salt
- 100 g lingonberries
- Pepper
- 1 head of red cabbage
Stuffing for the goose:
- 1 onion
- 1 orange
- 2 apples
- 1 garlic clove
- Marjoram
- Salt
- Pepper
- Water
Potato dumplings:
- 1 kg floury potatoes
- Nutmeg
- 1 tbsp semolina
- 300 g potato starch

A visit to a Christmas market wouldn't be complete without a warming mulled wine and sweet treats.
Mulled wine
- 100 g fine granulated sugar
- 3 pcs. star anise
- 6 pcs. cardamom pods
- 6 pcs. cloves
- 2 pcs. cinnamon bark
- 750 ml red/white wine
- 250 ml orange juice
- 1 pc. lemon
- 1 pc. orange

Sweet Christmas baking
Typical Christmas baking includes gingerbread, cinnamon stars, macaroons, Christmas fruit loaf (stollen) and mulled wine guglhupf cake. However, the undisputed Christmas cookies are the popular vanilla croissants.
Vanilla croissants
- 300 g flour (fine)
- 80 g icing sugar
- Pinch of salt
- 80 g walnuts (shelled and grated)
- 2 egg yolks
- 200 g butter (cold)
- 1 vanilla pod (pulp)
- 100 g confectioner's sugar (for rolling)
- Flour (for the work surface)
